Slice the bell peppers and onion into thin strips. Mince the garlic.

In the same skillet, sauté the bell peppers and onion for 5-7 minutes, until slightly softened but still crisp-tender.
Return the pork to the skillet and mix with the vegetables. Simmer for another 2-3 minutes to allow the flavors to meld.
Warm the tortilla wraps in a dry skillet until lightly browned.
Fill the tortilla wraps with the pork and vegetable mixture, sprinkle with grated cheese, and serve with sour cream.
