In a large bowl, whisk together the olive oil, lemon juice, grated garlic, oregano, thyme, sweet paprika, cumin, salt, and pepper. Add the thinly sliced pork to the marinade and let it marinate for at least 1 hour, or preferably overnight.
Heat a large skillet or grill pan over medium-high heat. Grill or pan-fry the marinated pork slices for 8-10 minutes, until golden brown and cooked through.
Meanwhile, thinly slice the tomatoes and red onion. Prepare the pita bread and briefly warm them on the grill or in a pan.
Fill each pita bread with grilled pork, tomato slices, red onion, fresh parsley, and a generous dollop of tzatziki sauce.
Serve immediately while hot. You can offer extra tzatziki sauce or French fries on the side.
