Slice the pork loin into equal pieces. Pound them with a meat mallet, then season with salt, pepper, and marjoram.
Heat olive oil in a large skillet over medium-high heat. Sear the pork slices on both sides until golden brown. Remove from the skillet and set aside.
In the same skillet, sauté the finely chopped onions and minced garlic until translucent.
Add the flour and stir to combine. Gradually pour in the water, stirring constantly until the sauce thickens.
Stir in the sour cream and mustard. Return the pork slices to the sauce. Reduce heat to low, cover, and simmer for 10-15 minutes, or until the pork is tender and fully infused with the sauce.
Garnish with fresh parsley before serving. Serve with mashed potatoes or rice as a side dish.
