Heat the oil or lard in a large pot and sauté the finely chopped onions until translucent.
Add the diced beef or pork and sear until browned on all sides.
Sprinkle with Hungarian sweet paprika, add the minced garlic, bell pepper, and tomato, then season with salt and pepper to taste.
Pour in the water or stock, bring to a simmer, then cook over low heat for 1.5-2 hours, or until the meat is tender.
Serve the Pörkölt with dumplings, rice, or fresh bread.
