Pozharsky cutlet, Russian chicken patties with butter and breadcrumbs, served with mashed potatoes

Pozharsky Cutlet

Pozharsky cutlets are a classic Russian dish that gained popularity in the 19th century at the famous Pozharsky family restaurant. These delicately seasoned chicken patties are special because of the butter inside, which melts during cooking, providing extra juiciness and a rich flavor. The simplicity and elegance of the dish make it an ideal choice for both everyday dinners and festive occasions.

    Preparation Steps

    1

Soak the white bread in milk until completely softened. Squeeze out any excess liquid and set aside.

    2

In a large bowl, combine the ground chicken breast, soaked bread, salt, pepper, and egg. Mix thoroughly until a uniform mixture is formed.

    3

Gently fold in the cold, diced butter, being careful not to let it melt completely.

    4

Shape the mixture into oval patties. Coat them evenly with breadcrumbs.

    5

In a large skillet, heat the vegetable oil over medium-high heat. Fry the patties on both sides for 3-4 minutes, until golden brown.

    6

Transfer the fried patties to a baking dish and bake in a preheated oven at 350°F (180°C) for another 10 minutes, to ensure they are cooked through.

    7

Serve the Pozharsky cutlets hot with a fresh salad, mashed potatoes, or steamed vegetables.
