10 g Fresh Yeast
10 g Salt
10 g Sugar
30 g Butter
50 g Baking Soda
1000 ml Water (for poaching)
5 g Coarse Salt

    In a small bowl, combine the lukewarm water with the sugar and yeast. Let it stand for 10 minutes, until foamy.
