200 ml Heavy Cream
200 ml Milk
50 g Sugar
3 Egg Yolks
3 tbsp Prosecco
1 packet Vanilla Sugar

    Prepare all the ingredients. Pour the milk and cream into a saucepan and warm over medium heat. Do not boil, just warm through.

    In a bowl, whisk the egg yolks with the sugar and vanilla sugar until light and fluffy. Gradually add the warm milk and cream mixture, then pour everything back into the saucepan while stirring constantly.

    Cook the mixture over low heat, stirring constantly, for 5-7 minutes, or until it thickens slightly. Be careful not to let it boil.

    Pour the Prosecco into the egg mixture and mix thoroughly to combine the flavors.

    Once well combined, strain the mixture through a fine-mesh sieve to remove any lumps. Pour the mixture into a bowl and let it cool to room temperature.
