Preheat your oven to 400°F (200°C). Peel the pumpkin, slice it thinly, and place it on a baking sheet. Drizzle with olive oil, season with salt and pepper, and bake for 15-20 minutes, or until tender.
Roll out the pizza dough and place it on a baking sheet lined with parchment paper. Brush with a little olive oil, then sprinkle with finely chopped garlic and oregano.
Arrange the roasted pumpkin slices and thinly sliced red bell pepper over the pizza dough.
Sprinkle the pizza with grated vegan cheese, and bake for 12-15 minutes, or until the cheese is melted and the crust is golden brown and crispy.
Before serving, sprinkle with fresh arugula and enjoy immediately.
