First, prepare the pastry if you're using a homemade version. Roll out the dough and place it into a pie dish. Once the pastry is ready, refrigerate it for 10-15 minutes to prevent it from breaking during baking.
Clean the mushrooms and cut them into smaller pieces. Mince the garlic.
Heat the oil in a skillet, then add the garlic. Sauté for 1-2 minutes until fragrant, then add the mushrooms. Cook the mushrooms for 5-7 minutes, until they release their liquid and soften.
Crack the eggs into a bowl, add the heavy cream and milk. Season with salt and pepper, then whisk well to combine.
Add the cooked mushrooms and garlic to the egg mixture. Mix thoroughly.
Pour the mixture onto the pastry, spreading it evenly. Place in a preheated oven at 350°F (180°C) and bake for about 30-35 minutes, or until the top is golden brown.
Let the quiche cool slightly, then slice and serve.
