First, prepare the shortcrust pastry if you're using a homemade version. Roll out the dough and place it into a pie dish. Once the pastry is in place, refrigerate it for 10-15 minutes to prevent it from shrinking during baking.
Thinly slice the onions. Heat the oil in a skillet over medium heat, then add the onions. While cooking, add a tablespoon of sugar to help them caramelize. Cook the onions over medium heat for 10-15 minutes, until they are beautifully golden brown and caramelized.
In a bowl, crack the eggs and add the heavy cream and milk. Season with salt and pepper, then whisk well to combine.
Stir the grated cheese into the egg mixture. Once the onions are ready, fold the caramelized onions into the mixture as well.
Pour the prepared mixture onto the pastry base, spreading it evenly. Place in a preheated oven at 350°F (180°C) and bake for approximately 30-35 minutes, or until the top is golden brown and set.
Let the quiche cool slightly before slicing and serving.
