100 g Quinoa
20 g Yeast
10 g Sugar
250 ml Warm Water
2 tbsp Olive Oil
1 tsp Salt
1 tsp Baking Soda
1 l Water for boiling

    Start by preparing the dough: In a large bowl, combine the flour and salt.

    Add the sugar to the warm water, then sprinkle in the yeast. Stir and let it rest for 5-10 minutes to allow the yeast to activate.

    Next, pour the yeast mixture into the flour, and add the olive oil. Mix thoroughly, then knead the dough by hand or with a dough machine for about 10 minutes, until smooth and elastic.

    Shape the dough into a ball, and return it to the bowl, then cover with a damp kitchen towel. Let it rest for 1 hour to rise.

    While the dough is resting, cook the quinoa, then purée until smooth and let it cool.
