Heat a skillet over medium heat and lightly grease it with olive oil.
Pour a ladleful of batter into the skillet and spread it evenly.
Cook the pancake for about 2-3 minutes, until golden brown, then flip and cook for another 2 minutes.
Grate the raclette cheese over the pancake and let it melt onto the hot pancake.
Chop the parsley and sprinkle it over the cheesy pancake.
Serve hot, optionally with extra garlic or a fresh salad.
