First, prepare the yeast: in a bowl, mix the warm water and sugar, then crumble in the yeast. Let it stand for 10 minutes, until foamy.
Meanwhile, in a large bowl, mix together the flour and salt. When the yeast is foamy, add the olive oil and pour it into the flour mixture. Mix well, then knead into a smooth dough.
Cover the dough and let it rest for 1 hour to rise. The ideal temperature is around 77°F (25°C).
Once the dough has risen, turn it out onto a floured surface and gently roll it out into a rectangular shape.
Sprinkle the raisins and vanilla sugar over the dough.
Fold the edges of the dough inward, then gently press the raisins and vanilla into the dough.
Let the dough rest for another 15 minutes, then bake in a preheated oven at 400°F (200°C) for 20-25 minutes, until the top is golden brown.
When done, let it cool slightly, then slice and serve fresh.
