Rinse the rice thoroughly in a strainer under cold water until the water runs clear. This helps to remove excess starch, ensuring the rice stays fluffy.
Soak the raisins in warm water for 5-10 minutes to soften them, then drain.
Finely chop the onion. In a medium-sized saucepan, melt the butter over medium heat.
Add the chopped onion and sauté until translucent, about 3-4 minutes.
Sprinkle in the cinnamon and nutmeg, stirring to release their aromas.
Add the rinsed rice and toast for 1-2 minutes, allowing it to absorb the flavored butter.
Pour in the water and stir. Add salt and pepper. Cover the saucepan and cook over low heat for about 15 minutes, or until the rice is tender and has absorbed all the liquid.
When the rice is almost done, add the prepared raisins and gently stir them in.
Remove from heat and let it rest, covered, for 5 minutes. This helps the rice achieve the perfect texture.
Before serving, sprinkle with toasted almonds and fresh chopped parsley. Serve warm as a standalone dish or as a side dish.
