Cut the flour and butter until crumbly, then add the powdered sugar and the egg. Knead until a dough forms, then refrigerate for 30 minutes.
Combine the curd cheese with sour cream, vanilla sugar, sugar, and grated lemon zest until you have a smooth filling.
Preheat oven to 350°F (180°C), and grease a baking pan.
Roll out the dough, place it in the baking pan, and pre-bake for 10 minutes.
Pour the curd cheese filling onto the pre-baked crust, and bake for another 20 minutes.
Beat the egg whites until stiff peaks form, then gently fold in the apricot jam.
Spread the apricot jam meringue over the cake, and bake for another 10 minutes, or until the meringue turns golden brown.
Cool the Rákóczi Túróslepény before slicing and serving.
