Add the raspberries to the saucepan and heat the mixture over medium heat. Tip: Do not boil, to maintain the raspberries' freshness and color.
Add 2 tablespoons of freshly squeezed lemon juice to balance the flavors. Tip: For a more intense flavor, you can also add orange juice.
Stir the cider thoroughly and let it steep off the heat for 5 minutes to allow the flavors to meld.
Before serving, strain the cider and arrange the raspberries artfully in glasses. Garnish with fresh mint.
