Wash the raspberries and mint. Gently crush the raspberries with a fork to release their juice. Carefully pluck the mint leaves from the stems.
Pour the non-alcoholic apple cider into a large pitcher. Add the crushed raspberries and lime juice. Stir well to combine.
Add the honey to the mixture and stir until completely dissolved. Tip: If the honey doesn't dissolve easily, you can use a little warm water to help it dissolve.
Pour in the sparkling water. Add the mint leaves, gently stirring to avoid bruising them.
Before serving, place ice cubes in each glass and pour the cider over them. Garnish with fresh raspberries and a sprig of mint.
