Red onion pogácsa served

Red Onion Pogácsa (Savory Scones)

Red onion pogácsa is a special variation of the traditional cheese pogácsa, made truly unique by the sweet-caramelized flavor of the sautéed red onion. In Hungary, pogácsa is one of the most popular savory pastries, often enjoyed at family gatherings or as a welcome treat for guests. The slightly caramelized flavor of the red onion perfectly complements the rich aroma of the cheese, resulting in a truly harmonious, crumbly pastry. If you want to make it even more special, try adding a little smoked cheese or freshly ground black pepper to the dough!

    Preparation Steps

    1

In the lukewarm milk, dissolve the sugar and crumble in the yeast. Let it stand for 10 minutes, or until foamy.

    2

In a large bowl, sift in the flour, add the salt, and then rub in the cold butter until the mixture resembles breadcrumbs.

    3

Pour in the proofed yeast mixture, sour cream, and the whole egg. Knead the dough until it is smooth and elastic.

    4

Finely chop the red onion and sauté it in a little butter in a skillet until lightly caramelized. Stir the caramelized onions and the grated cheese into the dough. Cover and let rise in a warm place for about 1 hour.

    5

On a lightly floured surface, roll out the dough to about ¾ inch (2 cm) thickness, then fold it over itself several times to create layers.

    6

Roll out the dough again to ¾ inch (2 cm) thickness and use a cookie cutter or pogácsa cutter to cut out the pogácsa. Place them on a baking sheet lined with parchment paper.

    7

Brush the tops with beaten egg, then bake in a preheated oven at 350°F (180°C) until golden brown, about 20-25 minutes.

    8

Let the pogácsa cool on a wire rack, then serve fresh or store in an airtight container.
