Wash, pit, and chop the plums into smaller pieces.
In a medium saucepan, combine the red wine, brown sugar, and a pinch of salt.
Add the cinnamon stick and star anise, then bring the mixture to a simmer over medium heat.
Add the chopped plums and simmer gently for about 15 minutes, or until the fruit is completely softened.
Remove the cinnamon stick and star anise. Use an immersion blender to purée the sauce until smooth.
Stir in the lemon juice and mix well. Keep warm until serving.
