Allow the cooked rice to cool completely. Combine it with the grated Parmesan cheese, egg, salt, and pepper.
Cut the mozzarella into small cubes.
Take a small amount of the rice mixture and form it into a ball. Press a mozzarella cube into the center of each ball.
Roll the rice balls in flour, then dip them in beaten egg, and finally coat them with breadcrumbs.
Heat the oil in a deep skillet or fryer. Fry the rice balls until golden brown.
Drain the excess oil on paper towels. Serve warm with tomato sauce or a fresh salad.
