In a large bowl, combine the cooked rice, beaten eggs, grated cheese, finely chopped parsley, crushed garlic, salt, and pepper.
Gradually add the breadcrumbs until the mixture is easy to shape. If it's too soft, add a little more breadcrumbs.
With damp hands, form small patties from the mixture, ensuring they are all the same size.
Heat the oil in a skillet over medium heat. Fry the rice patties for 3-4 minutes per side, or until golden brown.
Place the cooked patties on a paper towel-lined plate to absorb any excess oil.
Serve warm on their own, with dipping sauce, or a side salad.
