Squeeze out the excess water from the gelatin sheets and add them to the hot cream mixture, stirring until completely dissolved.
In a separate bowl, whisk the ricotta until smooth. Gradually whisk in the cream mixture, ensuring there are no lumps.
Strain the mixture through a fine-mesh sieve for a smooth texture, then pour into elegant glasses or ramekins. Refrigerate until set (at least 3-4 hours).
Before serving, garnish with fresh berries and drizzle with a touch of honey.
