Preheat your oven to 400°F (200°C). Wash the beets thoroughly, peel them, and cut them into medium-sized cubes.
Peel the garlic cloves and halve them or leave them whole, according to your preference.
In a large bowl, toss the beet cubes with olive oil, salt, pepper, and, if using, the finely chopped fresh rosemary or thyme.
Spread the seasoned beets and garlic in a single layer on a baking sheet lined with parchment paper.
Roast the beets for 35-40 minutes, or until tender and slightly caramelized. Flip them once or twice during cooking to ensure even roasting.
Before serving, drizzle the roasted beets with a little balsamic vinegar for an even more intense flavor.
Serve warm as a side dish or as a standalone meal. It's a perfect accompaniment to salads or grilled dishes.
