Wash the bell peppers, halve them, and remove the seeds. Roast them on a grill or in a skillet with olive oil until the skins are slightly charred, then peel off the skins.
Season the beef patties with salt and pepper on both sides. Cook them for 3-4 minutes per side in a skillet or on a grill until a golden-brown crust forms.
When the patties are almost done, place a slice of Gouda cheese on top of each, cover, and let the cheese melt.
Toast the hamburger buns until the cut sides are golden brown and crispy.
Thinly slice the red onion, and prepare the arugula leaves.
Assemble the burgers: spread garlic aioli on the bottom bun, add the arugula, the cheesy beef patty, the roasted bell pepper, and the red onion slices.
Top with the upper bun and gently press down. Serve immediately with french fries or a fresh salad.
