Preheat your oven to 400°F (200°C). Clean the cauliflower and cut it into small florets.
In a bowl, combine the olive oil, salt, pepper, and cumin. Toss the cauliflower florets in the mixture to coat them evenly.
Place the cauliflower on a baking sheet lined with parchment paper and roast for 25-30 minutes, or until golden brown and tender.
While the cauliflower is roasting, prepare the tahini dressing: in a bowl, whisk together the tahini, lemon juice, minced garlic, and water until smooth.
Transfer the roasted cauliflower to a bowl and drizzle with the tahini dressing.
Garnish with chopped fresh parsley and toasted sesame seeds for an extra burst of flavor.
Serve immediately as a standalone dish or as a side dish.
