Peel the potatoes and cut them into large chunks, then place them in a bowl. Toss with olive oil, salt, pepper, and finely chopped rosemary.
Mince the garlic and combine it in a small bowl with the olive oil and lemon juice.
Brush the chicken drumsticks with the garlic-infused oil, then arrange them in a baking dish.
Preheat the oven to 400°F (200°C). Place the chicken drumsticks and potatoes in the oven and roast for 40-45 minutes, or until the chicken drumsticks are golden brown and the potatoes are tender.
Once the chicken drumsticks are nicely browned on top, check that the meat is cooked through. If necessary, leave them in the oven for a few more minutes.
Serve immediately, garnished with fresh parsley, if desired.
