Roasted duck leg with apple braised red cabbage served

Roasted Duck Leg with Apple Braised Red Cabbage

Roasted duck leg with apple braised red cabbage is one of the most popular festive dishes in Hungarian cuisine. Preparing the duck requires special care, but the end result is worth all the effort: crispy-skinned, juicy meat that harmonizes perfectly with the sweet and sour apple cabbage. As the duck leg roasts in the oven, the aroma of marjoram and garlic fills the kitchen, while the sweet and tangy aromas mix as the apple cabbage simmers. Adding red wine not only enriches the flavors, but also gives the meat a beautiful, deep color. This dish is the perfect choice for festive occasions such as Christmas or family gatherings. The duck leg served with fresh, crusty bread or mashed potatoes is a true delicacy that evokes the rich traditions of Hungarian gastronomy.

    Preparation Steps

    1

Rinse the duck legs thoroughly and pat them dry. Season with salt, pepper, and marjoram. Slice the garlic, place it on the meat, and let it marinate for at least 1 hour.

    2

Preheat the oven to 350°F (180°C). Place the duck legs in a baking pan and add a little water to the bottom. Cover with aluminum foil and bake for 1.5 hours, basting occasionally with the pan juices.

    3

Remove the foil for the last 20 minutes, pour in the red wine, and continue baking until the skin is crispy and golden brown.

    4

While the duck is roasting, prepare the apple braised red cabbage. Finely chop the onion, peel and grate the apples. Shred the cabbage into thin strips.

    5

In a large skillet, heat the oil over medium heat. Add the sugar and caramelize to a light golden color. Add the onion and sauté until translucent, then stir in the cabbage and apples.

    6

Season with salt and pepper, then add the vinegar. Cover and simmer for about 30 minutes, or until the cabbage is tender but still slightly crisp.

    7

Serve the crispy roasted duck legs with the flavorful apple braised red cabbage, alongside fresh bread or mashed potatoes.
