Clean the mushrooms and halve or quarter them if they are large.
In a bowl, whisk together the balsamic vinegar, olive oil, minced garlic, honey (or agave syrup), salt, pepper, and chopped rosemary.
Add the mushrooms to the marinade and toss well to coat. Let it marinate for 15-20 minutes.
Preheat the oven to 400°F (200°C). Spread the marinated mushrooms in a single layer on a baking sheet lined with parchment paper.
Roast the mushrooms for 20-25 minutes, until they are nicely browned and the glaze has slightly caramelized.
Before serving, sprinkle with finely chopped fresh parsley.
