Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
Rub the pork ribs on both sides with salt, pepper, and a drizzle of olive oil. Place them on the baking sheet and cover with aluminum foil.
Roast the ribs for 1.5 hours. Check occasionally and drain off any excess fat if necessary.
While the ribs are roasting, peel the onions and slice them thinly. Mince the garlic.
Heat olive oil in a large skillet over medium heat. Add the onions and sauté for 10 minutes, or until translucent.
Sprinkle the onions with brown sugar and stir well to combine. Pour in the balsamic vinegar and cook for another 5-7 minutes, or until caramelized.
Once the ribs are cooked through, remove the aluminum foil and roast for another 10 minutes, or until they are browned and crispy.
Serve the ribs topped with the caramelized onions and garnished with fresh rosemary sprigs.
