Place the sausages in a baking dish or on a grill rack and brush lightly with olive oil. This will help them get nice and crispy.
Roast or grill the sausages for 15-20 minutes, flipping once halfway through, until they are golden brown and crispy.
While the sausages are cooking, grate the horseradish and mix it with a pinch of salt and a few drops of lemon juice to mellow its intensity, if desired.
Serve the roasted sausage hot, topped with grated horseradish and fresh parsley. Offer fresh bread or roasted potatoes on the side.
