Soak the lentils in cold water for at least 2 hours to soften.
In a large pot, heat the olive oil and sauté the finely chopped onion and garlic until softened.
Add the sliced carrots and celery stalk, stirring and cooking for 3-4 minutes.
Add the soaked lentils, pour in the water, and add the bay leaves, salt, and pepper. Cook over medium heat for 25-30 minutes, or until the lentils are tender.
Meanwhile, place the sausages on a baking sheet lined with parchment paper and bake in a preheated oven at 400°F (200°C) for 20-25 minutes, until crispy and browned.
Once the lentils are cooked, remove the bay leaves and adjust the seasoning to taste.
Serve the roasted sausages with the lentils, garnished with fresh parsley, if desired.
