Place the sausages on the baking sheet, drizzle with olive oil, and season with salt and pepper.
Roast the sausages in the preheated oven for about 25-30 minutes, turning occasionally, until evenly cooked and browned.
While the sausages are roasting, prepare the mustard for serving and chop the fresh parsley for garnish.
Serve the roasted sausages hot with a small bowl of mustard on the side. Sprinkle with chopped parsley for added freshness.
