While the sausages are cooking, prepare the cucumber salad. Peel the cucumber and slice it thinly.
Peel the red onion and slice it into thin rings. In a bowl, combine the cucumber and red onion.
In a small bowl, whisk together the vinegar, sugar, salt, and pepper. Pour the mixture over the cucumber and onion, then mix well. Let it stand for at least 10 minutes to allow the flavors to meld.
Once the sausages are cooked, remove them from the heat and let them rest for a few minutes. Serve with mustard and the prepared cucumber salad.
