Cut the sausage into 10 cm (approximately 4-inch) pieces and place them in a dry, hot skillet.
Cook the sausage over low heat, turning occasionally, until evenly browned and crispy on all sides.
Slice the red onion thinly. Add a little olive oil to the pan if needed. Sauté the onion until lightly caramelized.
Slice the pickled cucumbers thinly or into batons and place them on a plate alongside the fresh bread.
Serve the crispy roasted sausage with the sautéed onion, fresh pickled cucumbers, and bread. Sprinkle with chopped parsley.
