While the sweet potatoes are roasting, prepare the dressing: combine the vegan yogurt with minced garlic, lemon juice, and a pinch of salt.
Transfer the roasted sweet potatoes to a serving dish, drizzle with the garlic yogurt dressing, and sprinkle with fresh chopped parsley.
Garnish with extra sesame seeds, if desired, and serve immediately.
