Clean the turkey thighs and season generously with salt and pepper. Add chopped rosemary and rub it into the meat.
Grease a large baking dish with olive oil and place the turkey thighs inside.
Crush the garlic, slice the onions, and peel and cut the potatoes into wedges. Add everything to the baking dish around the turkey thighs.
Drizzle the entire dish with olive oil and cover the baking dish with aluminum foil.
Bake in a preheated oven at 350°F (180°C) for 1.5 hours. Then, remove the aluminum foil and continue baking for another 20 minutes, or until the turkey thighs are golden brown and crispy.
Serve the roasted turkey thighs with the potatoes and roasted onions, garnished with fresh rosemary.
