Bring 1 liter of water to a boil, then remove from heat. Add the dried rosehips and let steep for 10-15 minutes.
Strain the tea through a fine-mesh sieve to remove the rosehip pieces.
Add the honey and lemon juice, and stir well until the honey is completely dissolved.
Serve the tea warm, or chill and serve cold, garnished with fresh mint leaves.
