Blanch the tomatoes, then peel and chop them. Dice the onion and mince the garlic.
Heat the olive oil in a saucepan over medium heat. Sauté the onion and garlic until softened and translucent.
Add the chopped tomatoes, smoked paprika, salt, pepper, and rosemary sprig. Pour in the water and stir well to combine.
Simmer the sauce over medium heat for 15-20 minutes, or until it has thickened slightly and the flavors have melded. Stir occasionally.
Remove the rosemary sprig. Serve the sauce warm with pasta, meat, or vegetables.
