Soak the gelatin sheets in cold water for 5 minutes to soften.
In a saucepan, combine the heavy cream and sugar. Heat over medium heat, stirring constantly, until the sugar is completely dissolved.
Remove from heat and stir in the vanilla extract and rosewater.
Squeeze the excess water from the gelatin sheets and add them to the warm cream mixture. Stir until the gelatin is completely dissolved.
Pour the mixture into small glasses or molds and refrigerate for at least 4 hours, or until set.
Before serving, garnish with fresh strawberries or raspberries and mint leaves.
