200 ml Heavy Cream
200 ml Milk
50 g Sugar
3 Egg Yolks
50 g Walnuts
2 tbsp Rum
1 packet Vanilla Sugar

    Prepare all the ingredients. Pour the milk and heavy cream into a saucepan and warm over medium heat. Do not boil, just warm them through.

    In a bowl, whisk the egg yolks with the sugar and vanilla sugar until pale and fluffy. Gradually add the warmed milk and cream mixture, whisking constantly. Then, pour the mixture back into the saucepan.

    Cook the mixture over low heat, stirring constantly, for 5-7 minutes, or until it slightly thickens. Be careful not to let it boil.

    Chop the walnuts and toast them in a dry skillet until fragrant and lightly browned. Once toasted, add them to the egg yolk mixture.

    Pour the rum into the mixture and stir well to combine the flavors.

    Once well combined, strain the mixture through a fine-mesh sieve to remove any lumps. Pour the mixture into a bowl and let it cool to room temperature.
