Season the beef patties with salt and pepper on both sides. Preheat a skillet over medium-high heat and cook the patties for 3-4 minutes per side, until a golden-brown crust forms.
When the patties are almost done, place a slice of cheddar cheese on top of each and cover the skillet, allowing the cheese to melt.
Toast the hamburger buns in a skillet or toaster until the inside surfaces are golden brown and slightly crispy.
Cook the salami slices in a skillet for 1-2 minutes, until they are slightly crispy.
Wash the lettuce leaves, and slice the tomatoes and red onion into thin rings.
Assemble the burgers: spread mustard on the bottom bun, top with lettuce leaves, the cheesy beef patty, crispy salami slices, and then tomato and onion slices.
Spread mayonnaise on the top bun, and close the burger. Serve immediately with french fries or coleslaw.
