    Preparation Steps

    1

Prepare all the ingredients. Pour the milk and heavy cream into a saucepan and heat over medium heat. Do not boil, just warm it through.

    2

In a bowl, whisk the egg yolks with the sugar and vanilla sugar until light and fluffy. Gradually add the warm milk and cream mixture, then pour it back into the saucepan, stirring constantly.

    3

Cook the mixture over low heat, stirring constantly, for 5-7 minutes, or until it thickens slightly. Be careful not to let it boil.

    4

Pour the caramel syrup into the egg mixture and mix thoroughly to combine the flavors.

    5

Add the salt to the caramel mixture and mix well, so that the salt noticeably enhances the caramel flavor.

    6

Once well mixed, strain the mixture through a fine-mesh sieve to remove any lumps. Pour the mixture into a bowl and let it cool to room temperature.

    7

Refrigerate the mixture for at least 3-4 hours, or preferably overnight, to allow the flavors to meld and the parfait to set properly.
