Slice the tomatoes, cucumber, and red onion into thin slices.
Warm the pita bread in a skillet or oven until slightly crispy.
Place the toasted sausage and grated cheese inside the warm pitas. Return to the oven or skillet for 2-3 minutes, allowing the cheese to melt slightly.
Remove the pitas and arrange the fresh vegetables inside.
Drizzle with Greek yogurt and sprinkle with finely chopped fresh parsley.
Fold the pita and serve immediately.
