Sauté the garlic for a few seconds until fragrant. Add the seafood mix, salt, pepper, and lemon juice.
Cook the seafood for 3-4 minutes, or until fully cooked through. Set aside to cool slightly.
Melt the butter over low heat and let it cool for a few minutes.
In a large bowl, whisk together the flour, baking powder, salt, and black pepper.
In another bowl, whisk the eggs, then add the milk and melted butter. Mix well to combine.
Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the grated Parmesan cheese and the cooled seafood mixture.
Preheat your waffle iron according to the manufacturer's instructions. Lightly grease the waffle iron with butter or olive oil to prevent sticking.
Pour a portion of the batter onto the preheated waffle iron and cook for 3-5 minutes, or until golden brown and crispy.
Repeat the cooking process with the remaining batter, and keep the waffles warm until serving.
Serve the waffles sprinkled with extra parsley and grated Parmesan cheese. Offer with lemon butter sauce or aioli for dipping.
