Peel the black garlic cloves and mash them with a fork. Grate the fresh ginger.
In a medium saucepan, heat the sesame oil over low heat. Add the mashed black garlic and grated ginger. Sauté for 1-2 minutes, or until fragrant.
Pour in the soy sauce, honey, water, and chili powder. Stir well to combine, then simmer over low heat for 5-7 minutes.
Taste and season with salt, if needed. Stir in the toasted sesame seeds and cook for another 1-2 minutes.
Serve warm with grilled meats, roasted tofu, or fresh vegetables.
