Prepare the ingredients: wash and chop the tomatoes, peel and grate the ginger and garlic.
In a medium saucepan, heat the sesame oil over medium heat. Add the grated ginger and garlic and sauté for 1-2 minutes, until fragrant.
Add the chopped tomatoes and stir in the soy sauce, brown sugar, rice vinegar, and chili flakes.
Simmer the sauce over low heat for 20-25 minutes, stirring occasionally, until the tomatoes are completely softened and the sauce has thickened.
Once thickened, remove from the heat and let it cool slightly. Then, blend until smooth with an immersion blender or in a regular blender.
Season with salt, then sprinkle with toasted sesame seeds. Serve warm or cold with grilled meats, pasta, or as a dipping sauce.
