Peel and finely grate the ginger and garlic. Squeeze the juice from the fresh limes.
In a small saucepan, heat the sesame oil over medium heat. Add the grated ginger and garlic and sauté for 1-2 minutes, or until fragrant.
Pour in the lime juice, soy sauce, honey, and rice vinegar. Stir well to combine, then simmer for 3-4 minutes, or until slightly thickened.
Season with salt and pepper, then sprinkle with toasted sesame seeds. For a smoother sauce, blend with an immersion blender.
Let cool slightly, then serve with grilled meats, fish, or salads. It can be stored in the refrigerator for up to a week.
