Pour the wet ingredients into the dry ingredients and mix until you have a smooth, lump-free batter.
Heat a skillet over medium heat and lightly grease it with olive oil.
Pour a small amount of batter onto the skillet and cook for 2-3 minutes, until the bottom is golden brown.
Flip the pancake and cook for another 1-2 minutes.
Repeat the process with the remaining batter until all the pancakes are cooked.
Serve sprinkled with pine nuts and drizzled with honey or sugar syrup.
