Shalgam donut served with black radish

Shalgam Donut

Shalgam donut is a unique Central Asian fried pastry made with black radish. The radish adds a slightly spicy, earthy flavor to the dough, which perfectly complements both sweet and savory serving styles. It was originally a food of nomadic communities, prepared during long journeys because it is easy to store and simple to reheat. Shalgam donuts are often eaten with honey or garlic yogurt. If you like unique, crispy fried doughs, you should definitely try this one!

    Preparation Steps

    1

In a large bowl, combine the flour, sugar, and salt. Dissolve the yeast in a little lukewarm milk and let it stand for 5-10 minutes, until it begins to foam.

    2

Add the yeast mixture to the flour, then mix in the egg, melted butter or vegetable oil, and the grated black radish. Knead into a pliable dough.

    3

Cover the dough with a clean kitchen towel and let it rise in a warm place for about 1 hour, or until doubled in size.

    4

On a floured surface, roll out the dough to about 1 cm thickness, then cut into small squares or form into small balls.

    5

In a large skillet, heat plenty of vegetable oil to medium heat. The oil is ready when a small piece of dough immediately starts to sizzle in it.

    6

Fry the dough pieces until golden brown, turning constantly to ensure even cooking on all sides.

    7

Place the fried Shalgam donuts on paper towels to absorb excess oil, then serve warm or at room temperature with honey or a savory dipping sauce.
