In a large bowl, combine the lemon juice, vinegar, olive oil, crushed garlic, Hungarian Sweet Paprika, black pepper, and salt. This will be your marinade.
Add the meat cubes and onion rings to the marinade. Cover and refrigerate for at least 4 hours, or preferably overnight.
If using wooden skewers, soak them in water to prevent burning on the grill.
Thread the meat cubes and onion rings alternately onto the skewers, ensuring there's enough space between each piece for even cooking.
Preheat your grill to medium-high heat. Grill the skewers for 10-15 minutes, turning occasionally, until the meat is cooked through and nicely browned.
Serve the Shashlik skewers fresh, accompanied by a fresh salad, flatbread, or grilled vegetables.
